This is a work of art for converting all kinds of hex/bin/eeprom files. The documentation is impeccable and you just need to spend a little bit of time to figure everything out, but it's worth it in the end. Highly recommended. Clearly a talented coder made this.

SRecord is a mandatory tool for embedded programmers. A nice GUI would be very welcome.

This does what it says perfectly. Glad to see a new version recently with fixes and improvements. Takes a little time to read the manual, but it's a good tool with a lot of features. I used mine to replace HEXMATE and BIN2H since both of these don't run on Windows 7 and are much slower on Windows XP.
