Supercars, the car doesn't turn well while breaking. Is it meant to be a standard setup or can I tweak it how I want? I'd like to drive with trail breaking but it is difficult now.
HUD, I'd prefer the old style but I can't find a way to change it. I'd also would want to turn on the mini-map and rear veiw mirror but I can't figue out how to do it. No button works.
I run the latest flat-pack on Linux.

I'm very new myself, here. But I saw these questions were, as yet, unanswered. And I had some difficulty finding (at least partially) the answers myself. So I thought I'd start by posting my answers... I hope it can still help you, Kennet. (Or someone else.)
I think I've found some answers later, too, in the help/docs section, here; and in the in-game help screens. (Use [F1] to get this contextual help, nice!)

This is what I am least knowledgable on, b/c I haven't felt it; and/or, I may not understand. Also, 'SuperCars'/'SC' is a category; is there a specific car in it, that bothers you? (I've only seen the 'Kanegawa Z35', and its 'SRW'-category counterpart, steering off-course [to the right], and also become very unwieldy at higher speeds/gears; and, perhaps, the veering-off also occurs while braking?) In any case, you can set separate keys for the normal braking, as well as for the "E"-braking. Have you tried both? That's all I can say about that, sorry.

Me, too; I like the graphic guages and the map. You can change to it via the game's settings; choose OpenGL; and then switch from "Osg" (new) to "Ssg" (old), at the bottom.

This is the [M] key, to turn it on/toggle behaviour; but it only seems to be available in the 'Ssg' engine.
"I'd also would want to turn on the [...] mirror";
This is done via the [9] (nine) key; but it is only available in certain camera views/vantage points. Especially inside the cockpit, I believe. (But I think it works for both Ssg and Osg.)
Please let me take this opportunity to say that I've been trying out this game for nearly a year now -- I'm not much of a 'gamer', but I'm very enthusiastic about this! (I was looking for a car driving simulator with a realistic physics engine.) The game, to me, seems very mature and looks great to me (as a non-gamer); and I really like the different cars, categories, and tracks selection. Thank you for your hard work, everybody here at SD (and also the precursor team for TORCS)! Awesome!
